I need inspiration for barbecue side dishes?

Hi guys and gals

me and my brothers and sisters decided to have ourselves a bbq tomorrow.

since we are a pretty big bunch we decided to each do part of the preparations to not have one person do all the work and not to strain any ones purse. and I got stuck with the side dishes. but I'm kind of out of inspiration. I got some nice mixed salad and a good recipe for potato salad but can any one else give me some good ideas mainly using fruit and vegetables. oh and if you happen to have a killer recipe for salad dressing would be welcome too

    hmmm fruits and vegetables

    ITALIAN VEGETABLE SIDE DISH

    1 can green beans

    1 can Italian style stewed tomatoes

    Cook both vegetables separately. When ready to serve, mix both vegetables together for a delicious side dish.

    VEGETABLE SIDE DISH

    1/2 lb. fresh green beans

    2 lg. potatoes

    5 cloves garlic

    4 tbsp. olive oil

    Crushed hot pepper to taste

    Saute garlic in olive oil until slightly browned. Add potatoes and beans and pepper. Cook on medium heat until potatoes are soft and mushy but still in chunks.

    and for fruits

    maybe u could just cut up all the fruits and leave them all mixed in a cute bowl? it's a cute idea if they're small enough and mixed so everyone can try a little bit of everything :)

    and for the dressing

    how about a honey balsamic dressing like the one at TGI fridays? i find this home recipe to be very very similar and easy too :) it's delicious

    INGREDIENTS~

    1/2 cup balsamic vinegar

    1 small onion, chopped

    1 tablespoon soy sauce

    3 tablespoons honey

    1 tablespoon white sugar

    2 cloves garlic, minced

    1/2 teaspoon crushed red pepper flakes

    2/3 cup extra-virgin olive oil

    Add to Recipe Box

    DIRECTIONS

    Place the vinegar, onion, soy sauce, honey, sugar, garlic, and red pepper flakes into a blender. Puree on high, gradually adding the olive oil. Continue pureeing 2 minutes, or until thick.

    Loaded potato skins are good, bake in the oven for 1 hr then cut in half, take out most of the potato then stuff with chilli or cheese and onion or anything of your choice.

    Jacket potatoes are also a good side dish for the meat, again served with cheese or just plain.

    Corn on the cobs

    Breaded mushrooms, these can be homemade or bought from the shop.

    Sausage rolls or sausage and cheese on cocktail sticks.

    Pasta, tuna and sweetcorn mixed with mayo or salad cream is nice.

    And for a dessert you could make up a huge jelly with some cream then a platter of fresh fruits.

    Stringbean & Potato Salad

    2 lbs of fresh stringbeans, boiled till tender and cleaned & cut in half

    1/2 cup of white Vinegar

    1/3 cup of Olive Oil

    1 Red or White Onion sliced up

    3 cloves of fresh garlic (minced)

    4 sprigs of Spanish Cilantro

    Pepper & Salt

    1/2 tsp of Dried Oregano or Fresh

    3 lbs of potatoes boiled & skinned and cut up in cubes

    Mix all ingredients in a bowl and let sit for two hours. Then place in a fancy bowl - garnish with cilantro and serve hot or cold...doesn't make a difference.

    Salad Dressing

    1/2 Cup of Olive Oil

    1/2 Cup of White Vinegar

    1/2 Cup of Balsamic Vinegar

    1/3 Cup of Water

    1 tsp of Dried Oregano

    Black Pepper & Salt to taste

    1/3 Cup of Grated Italian Cheese

    Deliciouso....Don't place on salad until people are ready to eat. Mix well.

    Fruit Recipe

    2 Cups of Blackberries

    1 Half of a Watermelon (Cut Up)

    6 Ripe Peaches sliced up

    2 boxes of Driscolls Strawberries

    1 bunch of Grapes Yellow or Red

    1 Box of Blueberries

    1/2 lb of pitted fresh cherries

    Mix together and add some sugar...absolutely delicious and very summery and tasty.

    Roast Veggies on a skewer stick:

    Take a wooden skewer stick & cut chunks of your favorite vegetables i.e. mushroom, peppers, baby marrows, baby tomatoes etc. - thread them on the skewer stick, drizzle with olive oil & season with salt & pepper, pop them on the bbq, keep turning & basting with olive oil until tender.

    Corn on the cob:

    I always boil my sweetcorn for a couple of minutes prior to placing on the bbq. Season with salt & pepper, drizzle of olive oil & butter, wrap in tin foil & place on the grid, turning every now & then.

    A salad dressing that is always a hit and very easy is:

    Balsamic Vinegar

    Olive Oil

    Lemon juice

    Crushed garlic (optional)

    Salt & pepper

    Enjoy!

    Vegetable is not only a medical term, it is a cooking term. So the qualifications to become vegetable are not very coherent, which is why we have cases like the tomato: people argue both ways.

    *Baked Beans......any recipe you may have thats tasty

    *Corn on the Cob....wrap buttered ears in foil and put on hot coals in grill...they should cook up in about 15 minutes +...or boil 'em up inside on stove...

    *Cole Slaw.....shredded cabbage,mixture of miracle whip & ranch dressing,dash of sugar,pinch of garlic powder,blend well... S & P to taste.
