Need a good/interesting potato side dish recipe.?

I am making dill and cucumber pork chops and need a good side potato dish but have run out of interesting ideas.

Any good recipes, preferably without too much fuss or a zillion ingredients as I really don't want to have to go to the store.

Try the Spanish Dish ' Papas Arrugardas' , they are really simple and take 20 minutes to boil. In Spain they are served as a Tapas dish, my family like them with most food - Salads, BBQ's, Meat Dishes, Fish Dishes. Papas Arrugadas What you need are some very small potatoes, washed them well and place in a saucepan. Cover with water and add plenty of sea salt. Boil for 20-30 minutes until the potatoes are cooked . The local Canarian people let the water virtually boil dry, the more water you boil away the more salt on the outside of the potatoes. They should be very wrinkled and covered in salt. In the original passed down recipe the amount of salt was a quarter of the weight of potatoes, but using this you would end up with your potatoes covered very heavily in salt. It's really down to taste, I use very little salt (although remember sea salt is not as strong as normal salt), the potatoes do not end up with a layer of salt on them, but are still wrinkled and taste great.

    make scalloped potatos

Slice potatos thinnly, and blanch in boiling water.

Put into a 4 inch deep baking dish. Take 1.5 cups of milk, add a teaspoon of salt and table spoon of flour. Mix well and pour over potatos. The liquid should not overflow the potatos. Slice some cheddar and place on top. Cover the dish with foil or lid and bake for 1.5 hours at 325 degrees.

Tasty side goes well with pork.

If you want to stick with the dill try:

    Hot dish

Pan fry sliced potato's with butter, dill, salt, pepper, and other seasoning as to your taste. Or place thin sliced potato into muffin cups and season well add a pat of butter and bake for 30 minutes at 400 you can add onion, garlic, or whatever you like to this as well.

    Cold

Then you can always make a potato salad using dill, eggs, onion (chives), and diced dill pickles, salt and pepper. With either mayo or olive oil.

"A Canadian" gave you a pretty good starter recipe. I would take that recipe and add sauteed onions (diced), sauteed red or green bell pepper (diced) for color, and some diced cooked bacon. That would top it off perfectly. Mix it all together and heat until bubbly on either 350º or 400º. My cousin does this recipe each year for her Gingerbread House-Making Party and it's always the first to go.

My long tme favorite is quite simple: boiled (or steamed) potatoes, smothered in butter (use margerine if you must), add chives, salt, pepper and garlic powder if you like.
