1080p 120hz is far and away the better option, but will cost much more. I would only recommend 080p 120hz if you will be using the TV for watching Blu rays, playing HD games (Xbox 360/PS3) or using your TV as a computer monitor. If you will just be watching dvds and hd cable / satellite then 720p will do just fine. 1080p is about twice the resolution of 720p and 120hz is twice the refresh rate as 60hz.

Buy a Samsung with 1080p, the 120hz is not as important as the 1080p if you get a 40" or larger. If you can afford it, the 120hz is a nice addition. Under 40", you can save a lot with a 720p and get a bigger screen.
If you can afford it, the link is for the Samsung B750, maybe the best tv for price in lcds.

If over 40 inches, I would get a 1080p model..(Although most all cable broadcasts and off air are 1080i.) I do not like the 120 cycle option.!! It screws up some games and movies.!! (Just ask around for opinions on that.) Besides, I can not see a difference with 120 from a viewing distance from the TV anyway..I would suggest Plasma over LCD, because not only is it brighter, with a very good viewing angle, but a very fast response for fast moving objects, avoiding the LCD 'blur'..
