What else can I use pesto for?
I love pesto all kinds of pesto. as long as it's some kind of vegetable blended with garlic cheese and olive oil, i will gobble it up voraciously. My problem is that I'm on a diet, and losing serious weight means as few carbs as possible. so if I can't do pasta or bread, what other kinds of things can i use for spreading, dipping, and mixing with pesto?
I'm also a vegetarian, so no meats please. fish is fine though!

I use pesto as a sandwich spread. You could put it in italian bread with spinach, cheese, and tomatoes and press it like a panini.

You can use pesto as a rub for a baked fish, or for shellfish if you eat that. I think it would be good mixed into some plain cottage cheese though I've never tried it. And many veggie soups, especially mild and smooth ones (like butternut squash soup or tomato-chickpea) could benefit from a dab of pesto plus olive oil.

Toss it with spaghetti squash in place of the real spaghetti or toss it with a variety of vegetables. I stir it into minestrone soup and put it on a baked potato.
