No jailbreak is safe, and few methods are easy.
In fact, there really isn't an easy way to jailbreak a touch as of yet, but there ARE methods.
The Dev-Team, the original iPhone jailbreakers, recommend using redsn0w for the iPod Touch.

Remember though:
NO JAILBREAK IS TOTALLY SAFE
You CAN brick your iPod.
