It is a versatile herb, I like it with almost anything, I even add some to fish soups, but it is best with poultry and pork, it is used in poultry seasoning, and I buy wild savoury here in Canada from our province of Newfoundland, it also is nice with cod and boston bluefish in a baked dish.
Just be careful it is powerful and can overpower the dish if you use to much, they usually sell plants at nursery's in the spring and you can grow it on a window sill for fresh, it is lighter in flavour and a bit citrusy when fresh.

Yes to roast meat usually. Use it on pork, turkey, beef, chicken or lamb roasts. rub it on with some garlic, salt, pepper(maybe lemon on the chicken) and bake.
