When I dug my potatoes, there were many with bad areas. I can eat lots of them, but I am wondering if I save?
the good part and cut them up as french fries, will they keep frozen?

Yes. Just cut off the bad part and eat the good part. You can freeze them and they will be fine. Here is a link to tell you how to freeze potatoes.
