technically youtube is designed for all users to upload personal videos for streaming however it doesn't stop someone to upload copy righted material such as Official Music Videos, Movies, etc.
SO YES and NO it's not illegal to download home made videos that users make a post themselves but if a user posts a copy righted piece then yes it would be illegal to download the file.
But no worries YOUTUBE is far from being targeted like Napster and Kazaa was because it is not a Peer2Peer file sharing Application or website it is a Live Video Streaming Site and if others Create Programs that allow you to download The video then good for them I highly doubt you will get in trouble.

There is a ton of good content on YouTube, but copyright infringement claims and DMCA take-down notices mean that any given video can disappear at any time. Having a local copy of the video means you won't lose access if YouTube removes the video from their site. And if you convert the video to any format, you can view it more comfortable for your needs. I think it's legal as long as you do it with only personal use.
You have to download and convert the youtube video to mp4 video at first, then you can add it to iTunes and sync it to your iPod. If you don't know how to do that, I think this youtube tool would help you do the job, it's legal and works pretty well.

It is indeed illegal to upload copyrighted materials to YouTube. Fortunately for many YouTube users, YouTube is not in the business of law enforcement. YT does have rules against uploading copyrighted materials (most music and music videos are copyrighted).
When you download copyrighted material from YT, you become a part of the same crime.
Your intention to just watch them, but not sell them doesn't make it acceptable. Would it be okay for you take a DVD from a store without paying for it, if you weren't going to sell it, but just watch it?
You are obtaining something that, under normal circumstances, you would be required to pay for and you're doing it without paying for it. Those who placed it on YT didn't have permission from the owners of the property to do so.

BOSTON — A federal jury on Friday ordered a Boston University graduate student who admitted illegally downloading and sharing music online to pay $675,000 to four record labels.
Joel Tenenbaum, of Providence, R.I., admitted in court that he downloaded and distributed 30 songs. The only issue for the jury to decide was how much in damages to award the record labels.
Under federal law, the recording companies were entitled to $750 to $30,000 per infringement. But the law allows as much as $150,000 per track if the jury finds the infringements were willful. The maximum jurors could have awarded in Tenenbaum's case was $4.5 million.
Jurors ordered Tenenbaum to pay $22,500 for each incident of copyright infringement, effectively finding that his actions were willful.
