I suppose you're asking about the ones who landed at Plymouth, for US history.
For the trip over, they of course needed food, and (since fresh water didn't stay fresh for long) the really important thing was beer. Apparently they stopped short of their intended destination because they were running low on beer.
After landing, they had to feed themselves, and couldn't eat and drink all they brought, needing something to plant. Shelter requires tools, and those like an ax, an adze, and a froe would be handy.
Powder and at least a little lead would also have been necessities for firearms.
