If you are married you can use Mrs. at anytime, your husband does not have to be dead. The only way your husband can be a Jr. is if his first and middle name are the same as his father and your son also has to have the same first and middle name to be the III.
When your husband dies you become a widow and can still go by Mrs.

Let's use "Jack Smith" as the base name.
If I understand you correctly, your father-in-law is Jack Smith Sr.
Your husband is Jack Smith Jr.
Your son is Jack Smith III
Then you and your husband are Mr. and Mrs. Jack Smith Jr. Since a suffix isn't part of the legal name, you could also go by Mr. and Mrs. Jack Smith II
