What to do with gluten free rice flour?
During the summer, I got interested in Japanese treats, and wanted to try some. Unfortunately, I mistakenly picked up gluten free white rice flour instead of the glutinous kind (which apparently is nowhere to be found in North America unless you special order it...) with disastrous results. Now I have about 4 cups left and nothing to do with it. I'd like to bake something sweet. Any suggestions?

There are many people with celiac disease and other digestion issues that use rice flour daily. There are several great recipes that can be made with rice flour. Many of them require additional specialty ingredients. You could try making bread or pancakes with rice flour. Try a recipe from http://www.allglutenfreerecipes.com/

It's a great thickener - unlike wheat flour, which you have to make into a roux to avoid lumps, or cornstarch, which you need to mix with cold liquid and then stir in, with rice flour all you need to do is throw it straight in the stuff you want to thicken, then stir it with a whisk until it thickens up.

There are some people who are allergic to gluten and there are recipes developed for them. Try googling "gluten free recipes: and see what you get.
