Salisbury Steak with Mushroom Gravy
1 pound ground beef
1 egg
3 tablespoons crushed buttery round cracker crumbs
2 tablespoons finely chopped onion
1/2 teaspoon salt
1/2 teaspoon pepper
1/4 teaspoon poultry seasoning
2 (4 ounce) cans sliced mushrooms with juice
3 tablespoons butter
3 tablespoons all-purpose flour
3 cups milk
3 cubes beef bouillon
Directions
In a medium bowl, mix together the ground beef, egg, cracker crumbs, onion, salt, pepper and poultry seasoning using your hands. Shape into 6 patties about 1 inch thick.
Fry the patties in a large skillet over medium-high heat for 3 to 4 minutes per side, or until browned. Drain off grease, and remove patties to a platter; keep warm.
Melt the butter in the same skillet, and add the mushrooms. Cook and stir for about 2 minutes. Sprinkle the flour over, and mix in until blended. Stir in the milk and beef bouillon. Cook and stir over medium heat until smooth and starting to thicken. Return the patties to the gravy and cook over low heat, uncovered, for 10 minutes, stirring occasionally.
Serve with mashed potatoes and peas.

Tater Tot Casserole
1 pound ground beef
1 (10.75 ounce) can condensed cream of mushroom soup
1/2 cup milk
1 teaspoon garlic powder
1/2 teaspoon pepper
2 cups mixed frozen vegetables, peas, corn, carrots.
1 (32 ounce) package tater tots
1 cup shredded cheddar cheese
Directions
Preheat oven to 375 degrees F (190 degrees C).
In a large skillet over high heat, brown the ground beef and drain fat. Stir in condensed cream of mushroom soup, milk, garlic salt and pepper. Pour the mixture into a medium-sized casserole dish, layer veggies, top with tater tots.
Bake in preheated oven for about 30 minutes, or until tater tots are browned and crispy. Sprinkle with cheese return to oven for 5 minutes.

Spicy Sausage and Rice Casserole
28 ounces fresh, ground spicy pork sausage
1 cup uncooked long-grain rice
1 slice onion, diced
3 cloves garlic, minced
1 green bell pepper, chopped
1 red bell pepper, chopped
1 (28 ounce) can whole peeled tomatoes, crushed
1 cup chicken broth
1 teaspoon salt
1 teaspoon ground black pepper
1 teaspoon cayenne pepper
Directions
Preheat oven to 350 degrees F (175 degrees C).
In a skillet, brown sausage and drain grease. Stir in rice, onion, garlic and peppers. Cook 5 minutes. Stir in tomatoes, chicken broth, salt, pepper and cayenne pepper. Pour into 9x13 inch pan.
Bake for 1 hour or until rice is tender and most of the liquid is absorbed

Steak:
1 1/2 lbs. ground hamburger
1/4 cup flour
1/4 tsp garlic powder
salt and pepper
1 med onion sliced
Gravy:
1/4 cup flour
2 beef bullion cubes
kitchen bouquet brownong sauce 1/4 tsp
water
salt
pepper
Mix hamburger, salt, pepper, garlic powder, and flour together. Form into patties. Brown on both sides. Remove from skillet.
Saute onion in the same pan, adding a small amount of oil if needed.
After sauteing the onion, remove from skillet and add flour for gravy. Stirring constantly, brown the flour. Stir water into the browned flour to make the gravy.
Add boullion cubes, salt and pepper. Thin with water for desired thickness.
Add Kitchen Bouquet if gravy isn't brown enough.
When gravy is made, put steaks and onion in gravy. Simmer for about 30 to 45 minutes, checking often and adding water to keep gravy from becoming too thick.
Serve with french fries, rice, mashed potatoes or your favorite side dish!

Mama's Cheesy Meatloaf
1 lb. ground chuck
1 egg, beaten
2 tbls. worcestershire sauce
1 cup ketchup
1/2 tsp. onion salt
3/4 stack Town House or Ritz Crackers, crushed
2 cups grated cheese (I like sharp)
Mix all ingredients, except cheese. Press meat out onto plastic wrap about 1/2 inch thick. Sprinkle cheese over meat evenly. Roll up the meatloaf, jelly roll style. Tuck in the ends, and secure with LOTS of toothpicks. Bake at 350 degrees for about 45 min.
Sauce:
½cup ketchup
¼ cup mustard
¼ cup brown sugar
Combine, and heat thoroughly. About 15 min. or 20 min. before meatloaf is done, pour on some of the sauce, and finish baking. Keep the rest to pour onto the meatloaf slices at the table.

Try a veggie stir fry! low in fat and carbs.
1/4 cup each, chopped thinly:
-celery
-carrots
-onion
-red or green pepper
-broccoli
-cauliflower (if desired)
Sautee in a non-stick pan with 1 tsp oil over medium high heat until veggies are tender crisp. To make teriyaki sauce:
combine in a small bowl
-1 tsp corn starch
-7 tbs soy sauce
- 1/3 cup beef, chicken or vegetable stock
- 1/2 tsp sugar.
Stir well, then add to pan with vegetables and cook until sauce is bubbly and thickened. Serve with sour cream, tortillas and cheddar cheese (if desired). Also great over white or brown rice.

Last night we had meatball subs, the meatballs are pre-maid all you have to do it warm them in your favorite marinara sauce, put them on some good rolls and add some yummy provolone cheese, cant go wrong!! DELISH!
