best catering schools in the uk outside of London?

I want to take a career break and follow my passion to be a professional chef. Time and money are not a problems. I want to go to the best school that offers tuition in the "classics" Also what type and length of course should I do. I would do a maximum of four years but would like to work part time in the trade as I qualify.
