Which meat usually goes with Potato Latkes?

What meat usually gets served with latkes? If there isn't a traditional type of meat (in case it's not obvious I'm not Jewish), what would likely go well with them?

    Pork and latkes... sacrilege. ;)

    For Hanukkah a beef brisket is a traditional meal with latkes as a side. Keep in mind that it's not kosher to serve meat and dairy at the same meal. If you're not having meat with your latkes you could have sour cream as a topping. Another classic topping is applesauce.

    I make them when I make pork chops or a pork roast.

    Edit: well I'm not Jewish, but like Latkes with pork =)

    I prefer mine without meat actually. I make them with eggs so that adds protein.

    If I did serve meat it would be something like salmon or meatloaf.
