1) Yes. Lightning Vortex does not target.
2) No. Exodia is a win condition. You cannot negate win conditions.
3) Yes, you can use Stardust Assault to negate Blue-Eyes Shining Dragon (tidbit though, you cannot use Stardust Dragon [non-assault] to negate). However, you CANNOT use Blue-Eyes Shining Dragon to negate Stardust (it's already in the chain and it cannot reappear in the same chain twice).
4) Stardust Dragon will go to your opponent's side of the field since it went to his graveyard. Nothing you can do about this.
5) Since they are "semi-nomi" monsters, you have to have special summoned them correctly (through their requirements) first before you are allowed to special summon them with stuff like Call of the Haunted. If you mean to use their effects to special summon from the graveyard, then no.
6) No UNLESS a card effect (such as The Shallow Grave or Morphing Jar #2) says to special summon them in face-down defense.
