I need a recipe for SOFT sugar cookies.?
I have lots of recipies for sugar cookies, but can't find a good one for soft cookies. Have been trying recipes for a long time, but the cookies never come out soft. Any ideas?? Thanks.

Sugar Cookies (Soft)
Step One:
1 teaspoon vanilla
2 cups sugar
3 eggs
1 cup buttermilk
Combine above ingredients well and set aside.
Step Two:
6 1/2 cups flour
1 teaspoon salt
1 teaspoon baking powder
In a separate bowl, combine above ingredients well, then mix both sets of ingredients together well and refrigerate for 1 hour.
Preheat oven to 400°F when ready to bake. Drop by teaspoonfuls onto greased baking sheet and bake until edges are lightly golden brown (this depends on the size and thickness of the cookies being baked). Average sized cookies will take 10-12 minutes.
Watch carefully and do not over-bake.

Ingredients
1 cup margarine
1 1/2 cups white sugar
3 eggs
1 teaspoon vanilla extract
3 1/2 cups all-purpose flour
2 teaspoons cream of tartar
1 teaspoon baking soda
1/2 teaspoon salt
Directions
Cream the margarine and add the sugar gradually. Beat until light and fluffy. Add eggs one at time, mixing well after each addition.
Stir in the vanilla. Add the flour, cream of tartar, baking soda and salt gradually to the creamed mixture, stirring in by hand. Cover and chill dough overnight.
Preheat oven to 375 degrees F (190 degrees C). Line baking sheets with parchment paper.
Roll dough out on a floured surface to 1/8 to 1/4 inch thick and cut into your favorite shapes. Place cookies onto the prepared baking sheets.
Bake at 375 degrees F (190 degrees C) for 6 to 8 minutes or until cookie has a golden appearance.
i dont know how many you are trying to make but i have made these before and just followed the directions to a tee... they came out super soft but didnt taste under done. you know those cookies that are soft but taste raw.. yea these are sooo much better... but this recipe makes about 3 dozen

SOFT SUGAR COOKIES
1 cup sugar
1 cup butter
1 teaspoon vanilla
1/2 teaspoon almond extract
1 egg
2 1/3 cups all purpose flour
1/2 teaspoon baking soda
Preheat oven to 375°F.
Beat together butter and sugar on low speed of mixer until light and fluffy. Stir in flavorings and egg. Mix. Stir in flour and baking soda.
Using a small cookie scoop or two spoons, shape dough into balls. Drop by teaspoonfuls onto ungreased cookie sheet, 2 inches apart. Press cookie down slightly to flatten using the bottom of a glass which has been dipped in sugar. Colored or white sugar may be used.
Bake for 9-11 minutes, just until cookies have set. Remove cookies to a wire rack to cool.
Variation: Substitute 1 1/2 cups confectioners' sugar for the cup of sugar in above recipe. Cover and refrigerate 2 hours (or overnight). Roll dough out 1/4 inch thick on a lightly floured surface and cut out shapes. Sprinkle with colored sugars or frost. Bake on ungreased cookie sheets, 2 inches apart in a 375°F oven for 7-8 minutes, or until edges are lightly golden brown.
Tips: Do not overbake cookies; watch closely near the end of baking time. Bake on parchment paper for easy cleanup. Use two cookie sheets and have one ready to go into the oven as the first sheet cools (or just transfer parchment paper). For softer cookies, add a tablespoon of sour cream, yogurt or buttermilk.
Makes approximately 4 dozen cookies, depending on size.

Soft Sugar Cookies
2 cup unbleached flour, sifted
1/2 teaspoon baking soda
1/2 teaspoon salt
1/4 cup shortening
1/4 cup butter or margarine
1 cup granulated sugar
1 each egg yolk
1/2 cup buttermilk or sour milk
1/2 teaspoon vanilla extract
1 each egg white
Preheat the oven to 375 degrees. Sift the flour, soda, and salt together, and set aside. Work the shortening and butter together, with a spoon, until fluffy and creamy. Add the sugar slowly, continuing to work until light. Then add the egg yolk and beat until light and fluffy. Add the flour mixture alternately with the buttermilk, beating well after each addition. Stir in the vanilla and then gently fold in the stiffly beaten egg white.
Drop by rounded tablespoonfuls 3 inches apart on a greased cookie sheet. Flatten with a spatula to 1/2-inch thickness. Bake in the preheated over for 20 minutes or until done.
Makes 18 cookies.
