    alfredo is super easy. if you like cream sauces, you should also try a vodka cream sauce. you can't taste the vodka, and the alcohol cooks out, but it adds a nice depth of flavor.

    Alfredo Sauce

    1 pint heavy cream

    1/2 cup (1 stick) unsalted butter, softened

    1 cup freshly grated Parmigiano-Reggiano

    Freshly cracked black pepper

    Chopped fresh flat-leaf parsley, for garnish

    To prepare alfredo sauce: Heat heavy cream over low-medium heat in a deep saute pan. Add butter and whisk gently to melt. Sprinkle in cheese and stir to incorporate. Season with freshly cracked black pepper. In a large stockpot, cook pasta in plenty of boiling salted water for 3 minutes. Quickly drain the pasta and add it to the saute pan, gently toss the noodles to coat in the alfredo. Transfer pasta to a warm serving bowl. Top with more grated cheese and chopped parsley. Serve immediately.

    Tomato Vodka Cream Sauce

    1/4 pound (1 stick) butter

    1/2 teaspoon red pepper flakes

    1/2 cup vodka

    1 can Italian crushed tomatoes

    3/4 cup Parmesan cheese

    1/2 cup Romano cheese

    1 cup heavy cream

    Melt butter over high heat until bubbly.

    Add red pepper flakes.

    Rapidly add vodka. Simmer for 2 minutes. (The alcohol burns off but makes tomatoes "come alive".

    Simmer tomatoes with the two cheeses for three minutes, then add 1 cup of heavy cream and simmer for one minute.

    Prepare pasta

    Mix completely with the sauce and serve immediately

    1 – 8 oz. Package Philly Cream Cheese, cubed

    ¾ cup (3 oz.) fresh grated Parmesan cheese

    ½ cup Butter

    ½ cup half and half

    In large saucepan, combine cream cheese, Parmesan cheese, butte and milk.

    Stir over low heat until smooth. Sprinkle with fresh Parmesan cheese if desired

    WHITE SAUCE FOR PASTA

    4 tbsp. butter

    2 tbsp. flour

    1/4 tsp. salt

    1 c. milk

    OTHER INGREDIENTS:

    Oregano and or spike

    Parmesan cheese

    Sour cream

    Salt and pepper

    Garlic salt or powder

    Can use white cooking wine

    Basic white sauce: in saucepan melt butter. Stir in flour, salt and dash pepper. Add milk all at once. Cook and stir over medium heat until thickened and bubbly. Cook and stir 2 minutes more.

    Try a Tomato III sauce from Marcella Hazan. It's simple and delicious. You should also consider making spinach gnocchi.

    Any sauce you like would goes great on gnocchi. Alfredo, Cheddar Cheese, Marinara, A Little Ranch Dressing, heck a little of any kind of dressings. Only your taste pallet will limit the possibilities. Enjoy!

    It's really good but ritch: Burnt butter with sage and walnuts, Or cream sauce with bacon and mushrooms and spring onions, or a healthier option is the standard napolitana. which is:

    heat your olive oil then saute your garlic, onion, then add a jar of good quality pasata and basil let it simmer for 10-20 min then serve, with a sprinkle of parmesiano regiano.
