I'll be studying abroad from January to May in Spain and I applied for the Schengen Visa.?

Once I finish studying in Spain, I was thinking about traveling for a bit in other Schengen countries (I also applied to do an internship in Portugal for about 2 months). Would I have to renew the visa even if I would not be in Spain?

You need to get in contact with a Portuguese representative in Spain about a month before your Spanish visa expires and ask whether they may issue you a visa for Portugal which covers your travel to other Schengen countries and your internship. Usually Americans do not need a visa for a two month unpaid internship in Portugal however you may only stay visa-free within the entire Schengen zone for 90 days or three months.

If you cannot get a visa from the Portuguese Embassy you could also do a side trip for a short vacation to Morocco or Tunisia on the day your Spanish student visa expires and re-enter the Schengen zone not earlier than 30 days before your internship starts. This would keep you in status and you would not be faced immigration problems and you still could travel to other Schengen countries for 30 days..
