Hmm...not to completely bash your theory, but why would they advertise Paris Hilton being on the show, and not Jim Carrey? And even if he were anonymous, I think they'd say "we're going to have a surprise secret guest star this season". Just keep your eyes open...if if really was him, I'm sure you'll find out eventually. Someone will spill the beans

Plus, he probably was too busy filming A Christmas Carol, which just came out, so it seems odd that he'd make a TV appearance at this time and not have it be publicized...unless it was like a subliminal message like "Hey it's Jim Carrey!"

No, it wasn't, or, at least, I'm pretty sure it wasn't. If Jim Carrey was guest starring, I'm pretty sure it would have generated a bit of publicity, and his name surely would have been mentioned when you searched it. He's pretty famous. Not listing his name if he did guest star would lose Supernatural publicity.
