How long can you keep in-shell oysters in your refrigerator?

I harvested them straight from the bay.

    if they are on ice, then 24 hours, just in the fridge, about 2 hours, if the oysters start to open even slightly, DO NOT I REPEAT DO NOT EAT THEM

    I believe the only way to cook mussels or welks is to steam them. Add a little white wine or water to the pan put in your mussels, cover the pan with cling film and cook on a high heat until the shells open. don't overcook them or they will become rubbery and unpleasant to eat. Note; when preparing the mussels, they should all be closed, any that appear to be open slightly should be tapped, and if the shell closes then you know the are ok to eat, if not, discard. Also discard if the shells are cracked, as this means they are probably dead. I won't give you any recipe ideas as someone has reeled of a huge list for you to try! Hope this helped
