Cheesecake bites assistance please?
I'm wanting to make Eggnog Cheesecake bites, and include them in my Christmas tins for friends. I have the recipe, but I don't have mini muffin or tart tins...AND, I don't want to have to do multiple batches. So, my options are to either bake the cheesecake in a square spring form pan and cut them into little squares after setting overnight - or, to place the individual foil tart cups on a baking sheet.
So here are my questions?
1. Any suggestions on how to cut the cheesecake to it won't be messy? I live in a hot, humid climate
2. Can the small foil cups stand alone on a baking sheet? Or do they NEED the support of the muffin tin?

Sometimes if I need to cut in straight lines, I use a plastic or metal ruler. One that's clean, of course. Refrigerate the cheesecake and whatever item you choose to do the cutting with and take it out right before you're going to cut it.
Foil baking cups need the support of a muffin tin, or they'd fall with the weight of the batter. If you had some open-ended cylinder close to the size of the foil cups, such as a small can, you could place the cups in them to hold them up.

The first option is the best. Just cook, set, cut...then wrap them in parchment before putting them in the tin. The reason for the parchment is because it is a moist cake, so the moisture will dampen the cookies. I don't know what type of foil cups you are refering to, but you can cook them doubled or trippled up and just see what happens, however, I always use a muffin tin to be safe.

1. Let it set overnight, but also freeze it a bit before cutting. Maybe 30 minutes or so in the freezer.
2. I wouldn't use muffin cups, even foil, with out a pan. The batter will make them spread out and probably spill. I suppose you could try it with 1 or 2, but my guess is that it won't work.

Your best bet is the foil cups option. If they are the stiff kind used for candy etc they should be firm enough to hold up. Use more than one if you want more stiffness.
