depends on if it made for cooking or disecting.
chickens aren't the best for dissecting, but you would go about it the same way as any other organism- make a y incision and cut off the chest plate (and in this case the breastbone) and go from there. in autopsies they weigh the organs and use the bmi and height to see if they are of standard or abnormal weight, but i don't think you will be looking for abnormalities.
