I started to look online about jailbreaking, it looks like there is many different ways to do it. Which is the best way? Is there a way to tether and not jailbreak?

I think you are confused. I will clear you. You cannot do anything apart from what apple is giving on iphone without jailbreaking. If you decide to jailbreak your iphone I think there is no harm done to iphone. If after jailbreaking anything happens to iphone and you wanna claim warranty, just restore your iphone without jailbreaking.
Next If you want to tether You need to mention which firmware u r using. If using 3.0 you have options to choose in cydia and if using 3.1.2 you can use custom firmware for tethering.
