Neurologically, why do people like to use alcohol and other drugs?
Drugs that affect dopamine and serotonin in some way are understandable, but that only crosses out MDMA, amphetamines, cocaine, and opiates as far as I know. What about the others like alcohol, NMDA antagonists, marijuana, and first generation antihistamines(or do they work like nicotine?)?

That does not explain WHY people use drugs. There is no known neurological reason for drug use. It is just part of society. Everyone uses drugs and they always have, illicit or otherwise. People have wanted to alter their consciousness through all of recorded history; some of the drugs have changed but the desire is the same.
That's like asking: What is the neurological reason that people breath air?

I know alcohol has its addictive effect since it stimulate the release of opioids within the brain.
Not sure about the others, but from what I can recall cannabis works via increased dopamine release also
