Replace ALL of the water, if you can. I use all of the juice from the can of pineapples, and only have to add a little water to get the right measurement. It is SOO good!

When you're making a from-scratch pineapple upside-down cake, you won't be adding any water at all. The pineapple part of the cake is simply placed in the bottom of the pan with the caramel sauce and some juice from the fruit soaks into the cake when you turn it over. In the ingredients for the cake part, there isn't any water. If you're making the cake from a box mix, I would not add pineapple juice because the acidity could be a problem, and I'd worry that the cake would be too sweet. Here is a url for a from-scratch recipe to check out. Hope this helps and enjoy your cake!

I purchased a box pineapple cake mix and followed the recipe on the side for upside down cake. I substituted the juice from the canned pineapple for the water. It turned out so delicious.
