you can do roll ups in tortillas, it's fun for kids to eat and you can put different colorful veggies and maybe hide them in the cream cheese. Always hide veggies in soups and sauces, also in mashed potatoes, you can add celery root, or cauliflower, or turnips too, you can even make mashed other veggies and tell them you out food coloring on the mashed( carrots, broccoli etc.) potatoes
Also what I find works best is to have them help you in the kitchen, if they are involved from the beginning of the meal, they are more likely to try it.
I always put in a fruit or veggie in cake, you can't taste it, like beets or sweet potatoes apples bananas etc
Have fun!!

Do you know you can hide veggies in any recipe without kids knowing. If you are making a pasta with a pasta sauce, finely chop veggies, such as zucchini, carrots, and mushrooms. There is a great cook book from Gerry Seinfelds wife, where she hides all types of veggies in meals and the kids don't even know it

Make a fruit smoothie always adding more fruit to it as you put in veggies that TASTE like fruit! XD Or regular broccoli and all the stuff those children will hate...just don't let them see you doing so and put it in a fun lookin' ice cream tub. ;)
