Well, the only "must see, must do" thing is to chill out and have fun!
When it comes to eating and drinking, check out Yaxche (on Calle 8, between Av. 5 and 10) at least ONCE (preferably early in your trip so you have plenty of chances to come back for more!) What makes Yaxche totally kick butt over every other place in Playa del Carmen is its very high quality and its very LOCAL focus on fusing traditional Mayan flavors with nouveau Mexican cuisine. The result is exciting flavors unlike anything you've likely tasted before (order a Kohunlich to start dinner --- it's made with Xtabentun, an anise-flavored liquor made in the Yucatan).
I'd suggest doing several dive tours, if scuba is among your outdoor interests. If not, do a snorkling trip to one of the many off-shore reefs in the region.
I'd also recommend doing a day-trip to Tulum, and another (maybe even on the same day) to Coba. It's fairly easy to rent a car or a motorcycle in this area, but if you're not comfortable doing that, the ADO buses can get you there comfortably and affordably (schedules and rates are on their web site, http://www.ado.com.mx/)
I'd also recommend doing a day on Cozumel. It's 140 pesos each way on the high-speed ferries (hint: it's better to buy 1-way tickets than round-trip because there's no savings on round-trip and you have more flexibility on when you return if you leave open the option that you could take either the white ExpressJet ferries or the blue-yellow Magna ferries (or whatever the brand name is....) Once there, rent a vocho or a motorcycle and cruise around the island. You could check out the small Mayan sites, or even better, hang out on a beach like Playa Bonito or maybe do the Atlantis submarine ride, ride horses on the beach, or swim with the dolphins at Chankanaab.
You also might be interested in places like Xcaret or Xel-Ha --- various outdoor and cultural activities in a kind of theme park like atmosphere.
Just a few ideas...

it somewhat is a especially neat place. ingesting age in Mexico is eighteen, yet there is plenty to do in Playa del Carmen besides. The seashores, somewhat the everyday public one on the city, are beautiful. additionally, there are distinctive neat highway distributors, actual eating places and different cultural issues, besides as a important volume of Americanized procuring.

I went for my cousins wedding and ITS A BLAST!!!!!
If you guys like seafood i highly recommend going to the restaurant called the Blue Lobster. My family and i went there, i normally hate seafood, but i tried lobster tail and it was delicious. so good!!!! Also if you have the chance to just walk down the strip there are lots and lots of shopping things around there. Or if you go to the very end of the strip you can take a fairy across to Cozumel and they have all sorts of stuff to do over there. Its so much fun. If you have the chance to go snorkeling, i did that and wow!!! it was cool.
I hope you guys have a wonderful time. It is so much fun down there. I didn't want to come home.
anyway. enjoy your trip guys.
