What can I use instead of baking soda when baking I'm on a very low sodium diet?

    There really isn't any substitute for baking soda in baking. You'll have to find recipes that use a different leavening product. Normally it is salt that people have to work so hard to reduce or eliminate from their diets.

    Baking soda has 658 mg sodium per 1/2 teaspoon.

    Baking powder has 240 mg sodium per 1/2 teaspoon, but is not a straight substitution for baking soda. BP has roughly 1 part bs and 2 parts cream of tartar.

    For comparison, salt has 1180 mg sodium per 1/2 tsp.

    Please realize when you're baking, you're using 1/2 or 1 teaspoon of baking soda for the entire recipe so it really isn't much per serving.

    I suggest you ask your physician or dietitian whether you need to be overly concerned about baking soda or just baked goods in general since they mostly contain salt also.
