I've use this recipe several times...the roast turns out very tender...as for keeping the string on, might as well, it just keeps the roast in one piece during cooking.

I just use enough water to cover the bottom of the slow cooker and let the meat make it's own juice. The amount of liquid you are using would certainly be enough but you don't have to use that much. Eight hours should be plenty of time. I usually cook on high for the first couple of hours and then lower it to low unless I'm going to be away from the house. I'm cooking one today too and planning on it being done in 6 hours. Make sure you check it before the eight hours is up. Leaving the twine on it is fine.

You can do whatever you wish with the twine, personally I would take it off. 32 oz should be plenty of fluid, remember that a slow cooker keeps the juices in for the most part (don't life the lid too often).
Yum, now I want pot roast....when's dinner (wink)?

That should be more than enough. I would caution you to actually start w/ about half of that actually. If you are you making the pot roast in gravy then 32 oz would be fine. Make sure you put the veggies at the bottom, and if you do decide to take off the twine, I would brown the meat before I put it in the croc pot

In a slow cooker, I just put in the meat, then pour in the liquid. I put veggies on top and around the meat. Season and let cook. Delicious!
