elementary science fair project ---definition of osmosis/capillary action?

suggestion for science fair project is as follows; place stems of white carnations in colored water and the color will absorb to the flower. is this osmosis or capillary action or neither? would this be a suitable project for 3rd grade. thank you for your input.

    Hi, this is an interesting topic. My daughter did this project last year and used celery with red food dye and salt water. Results are collected over 3 days and yielded facinating discoveries. Try the carnations flowers with the two medium and have fun. Cheers :P
