How do I convert PDF files to XML files?

I'm trying to work with Finale PrintMusic and Apple Garageband side-by-side because in Garageband it doesn't transpose the instruments correctly and puts them in weird clefs; I want to correct this in Finale, but I can't since it can only import XML files (garageband exports sheet music in PDF). How can I convert PDF's into XML's? Thanks, your answers are very much appreciated!

    Samuel,

Sorry for replying to your answer 5 years later. Acrobat cannot export to Musicmxl files since the convention is different from the regular XML format. Musicmxl is a music specific format. Sibelius First can convert PDF to Sibelius Format being reading using using the lite version of PhotoScore, which sends the score to Sibelius in .sib format. Sibelius, then can export it to Musicmxl.

The lite version, however, offers limited features. If you want the full thing, then you can shell out more than two hundred bucks for the full version.

There are other software solutions but the accuracy is so, so. I haven't found a better solution.
