Anyone have any really good biscotti recipes I can try?
I made a batch of chocolate chip biscotti from the Joy of Cooking, and they turned out pretty well, but to me, they taste a little bit too much like a regular old chocolate chip cookie that's extra hard. I'm looking for a recipe that's fairly healthy and not too sweet, but with deep vanilla or almond flavors. I'd really like a lemon poppyseed recipe if possible. Anyone have any good ones? Thanks in advance :)

My moms recipe for Almond Biscotti....a nice, REAL, traditional Italian recipe...
3 cups almonds, toasted the biscotti turns out better but you can skip the toasting if you wan
1 cup white sugar
1 cup brown sugar, light does better in this recipe than dark
2 1/2 cups flour
2 tsp baking powder
3 large eggs
1 tsp vanilla
2 tsp orange, or lemon zest
1 egg, beaten to brush on top
In a large bowl, hand mix almonds, sugars, baking powder, and flour.
In a small bowl, whisk eggs. Add the vanilla and orange zest and whisk until well blended.
Now, add this to the flour/almond mixture and work the batter with your hands (you'll have to flour your hands to do it). It will be very sticky, but keep squeezing it through your hands until it forms a dough.
Split the dough in four pieces, and round them out into a ball.
Use a floured surface (and floured hands) to shape each section into a log.
Place on a baking sheet lined with parchment and brush the tops lightly with your beaten egg, Bake at 350 degrees for about 40 minutes. The tops should be shiny and golden brown. Adjust your cooking time if you need to...all ovens cook differently. When done, remove them from the oven and turn the oven off.
Cool on a wire rack for 20 minutes, then slice, diagonally, and put them back on the baking sheets and place them back into the oven for about 45 minutes. Be careful when you cut them. If after 20 minutes they crumble when you begin cutting, then wait another five minutes. They should be cool, but not cold....if you let them sit too long they get too hard to cut and you can't put them back in the oven to "dry". The max time they can sit out is 25 minutes.
Because of the nature of Biscotti, healthy, well, it doesn't compute in there. You can go a little healthier by using an unbleached flour and organic/raw sugar....but, its the sugars, in combination with each other that allow it to get that crisp texture.

Chocolate Orange Hazelnut Biscotti
1/4 c. hazelnuts , chopped coarse
2 c. flour AP
1/2 c. hazelnut flour
1/4 c. cocoa
3/4 tsp. b. soda
1 c. sugar
2 eggs
1 egg white
1 1/2 tsp. orange zest ( no pith - the white part )
1 tsp. vanilla
Preheat oven to 350 degrees F. Spray a baking sheet and set aside . Toast hazelnuts in oven for 8-10 min. or until lightly browned . Place nuts on kitchen towel and rub to remove skins ; then chop coarsely ; set aside . Reduce oven to 325 .
In lg. bowl combine flours , cocoa and b. soda ; set aside . In another bowl , beat at med. speed eggs , zest and vanilla until well combined . Turn dough onto a lightly floured surface . Shape into 2 , 12 " logs and place onto prepared baking sheets and bake 20 - 25 min. or until bottoms are lightly browned . Remove to a wire rack and cool 10 min.
Cut each log into 1/2 inch thick slices . Return slices to baking sheet and bake 10 - 15 min. or until light;ly toasted all over . Turn onto wire rack and cool completely

i really like cranberry pistachio ones but i don't have a recipe. try raspberry chocolate chips with white chocolate. they are sweet, but they taste good for special occasions.
