ANYONE HAVE ANY GOOD BIRTHDAY CAKE RECIPES?
Ok so i'm not so good at the baking thing... its not because i dont want to do it its just because i dont know how to do it. I'm really ready to start learning. i'm 26 years old and i think its time i learned how to bake.. what better opprotunity than to bake my 2 sisters birthday cakes... this is going to be a surprise as both of them know i'm not a cook!!! My older sister will be turning 31 and my baby sister will be turning 10 and i'm throwing them both a surprise birthday party on saturday and i need to learn how to make a homeade cake. so if anyone has any good recipes or ideas if you dont mind sharing them i would appreciate it :) Thank you and God bless!!! Ingredients
* 1 cup butter
* 2 cups white sugar
* 1 teaspoon vanilla extract
* 4 eggs
* 3 teaspoons baking powder
* 3 cups all-purpose flour
* 1 cup milk
* 1 pinch salt
Directions
1. Preheat oven to 350 degrees F (175 degrees C). Grease and flour one 9x13 inch pan or three 8 or 9 inch round layer cake pans.
2. Cream the butter and sugar together until smooth and fluffy. Mix in the vanilla extract.
3. Separate the eggs and set the egg whites aside. Add the egg yolks one at a time to the creamed mixture, beating after each one.
4. Measure the baking powder into the flour, sift a little of the flour into the creamed mixture. Continue adding the flour and the milk alternately, while continually beating the mixture. Beat the cake batter until a few air bubbles show.
5. Beat the 4 egg whites with a dash of salt until stiff. Gently fold egg whites into the batter. Pour batter into prepared pan(s).
6. Bake at 350 degrees F (175 degrees C) until cake(s) test done, approximately 25 to 35 minutes.

There are some AWESOME, healthy recipes on this site: www.elanaspantry.com. They are so much healthier for you, since in all her recipes she uses no white flour, or wheat flour (i.e. no gluten), and no sugar (she uses Agave nectar or Honey), and she doesn't use dairy in a lot of recipes too! Her things are really easy to make and turn out wonderfully. Here are some recipes:

And if you are wondering WHAT is almond flour and coconut flour, I will tell you. You can buy almond flour, but it is usually cheaper to make yourself by taking blanched almonds and putting them in the food processor on high for a little bit, 'til it's a floury consistency. Coconut flour is a lot more like normal flour, and tastes great too! You can buy it a Trader Joe's or some place like that. Good luck baking! And I hope your sisters like it!
