How can i fix Kimchi that is too spicy?
I made some kimchi but fudged the recipe a bit. Now it is BLAZING hot - so much so that I can barely stand to eat it! How can I fix it??

Two options:
Option 1. You could always put it in a collander and do a quick cold water rinse. Yeah, seriously.
Option 2, Just mix in about 3 times the amount of solid ingredients (vegetables) to the kimchi you've already made. This will help the hot chili dissipate or disperse by adding a large volume of solids. Of course, you'll need more containers/jars if you do this.

Dilute it. Straining it will help somewhat, but if it's been sitting around awhile, the spicy will permeate quite a bit. Add more of your veg. Or, you could just keep extra rice on hand, or turn the kimchi into chige.
