A full quart of pesto!?

I was given a quart of frozen pesto (actually two 1-quart packs). Don't get me wrong, I really like pesto, but it says on the pack that once thawed you have to use it up within 7 days. Now that's a LOT of pesto to consume in only one week. I don't really like throwing food away, so I'd like to use it up before it goes bad. One suggestion was to use it on pizza, but we have family members that don't like pizza. Any ideas on how to use a full quart of pesto in only one week?

    Don't panic

    Instead of trying to use up all that pesto, run the closed container under some very warm running water and see if you can get the whole frozen cylinder out in one piece ... then slice a portion off and put the rest back in the container and pop it back in the freezer. You can use just the amounts you want without having to thaw the entire thing and use it in record time

    I would do what tom says. Pesto is one of the few things I would not be concerned about thawing and re-freezing. Take what you need and repackage the pesto in smaller freezer bags.

    This is what I do with pesto

    Top grilled chicken

    Use it as a base for salad dressing

    Stir a little into a marinara sauce

    Top pizza or foccaccia

    Work it in to homemade bread or pizza dough

    Serve a fresh mozzarella and tomato salad with pesto

    And, of course toss with pasta

    Well, the first obvious choice would be to eat it with pasta. Just cook any type of pasta and drain it, then add the pesto and a little water from the pot. Mix and serve! You can add pecorino or parmesan cheese to whoever likes it.

    You can add pesto to pretty much anything you can think of. Chicken, steak, shrimp..... Just brush some of the pesto on top of any of those and grill them. Its delicious!

    If you're feeling creative, you can even make pesto ravioli. You can make the dough yourself or even better you can just buy a pack of wonton casings at the supermarket and stuff them. Then boil them and serve with whatever you like...

    use it a marinade for chicken, turkey.. dump some pesto in a bag, add the chicken breasts and let them soak, dredge in bread crumbs/panko mixed w/more Parmesan for an interesting twist.. or you can marinade chicken/turkey and freeze it while it marinades and it will be fine..

    use it as a dipping sauce for veggies

    make homemade pasta and add it too the pasta itself an then as a sauce

    marinade veggies like squash, zucchini onion and mushrooms throw them on the grill..

    make a delicious carrot/squash soup and use it as a garnish..

    Use it to marinate chicken or pork. Leave it on overnight then bake in a high oven. It's really delicious.

    You can refreeze what you do not use. That note about using it in 7 days was if you thawed and did not refreeze.
