Who are those people called you cut down trees? Like if a rich guy wanted to cut down a forest to make a mall, who's he called?
Or if a guy wanted a mall to be built in a forest, who would be the person to cut down the trees?

A simple, single tree - A tree surgeon.
A whole forest - A logger.

The above answerers are correct in their terminology.
However, I should like to take your question a little further, given the continueing catastrophic forest depletion in the World today. How these hypothetical persons will be remembered will depend entirely on what they do to replace the cut trees and preserve the remaining ecosystem, and what type of building they erect. Will it be "green" orientated?

Yes, some small companies will pay a small fee for your trees if they are of a viable size to make lumber with. It isn't a lot of money, and depending on the company, you may have to use it to clean up the mess they make. Also, some portable sawmills will come in, make lumber of your trees, haul off the trash and pay you a small sum of money. It really depends on your locality. Pine trees use different setups at the lumbermill than oak, so you may try to sell them to two different companies that specialize in that.
