deadheading calla lilies?

should I cut off just the flower or cut the stem too?

    Yes, remove the stem for aesthetic reasons. Callas make super long lasting cut flowers for inside. When they're done flowering the foliage will nourish the bulb, when the leaves die back, remove them.
