so if God knows what we will choose, does this mean he knows these choices before we are created?

According to the Bible He does -
Psalm 139:16,
"All the days ordained for me were written in your book before one of them came to be."

You are made by your parents. You have certain characteristics you get from them. You respond to things based on your characteristics and become the person you are. God knows who you are in your heart and offers you a chance to be His child. Then you can make choices based on His characteristics.
It is simple if you think about it.
