Question about carbohydrates and insulin?
I know eating carbohydrates raises insulin levels in the body but is it just simple sugars that raise it or fibrers as well? Because simple sugars are basically glucose which is what the insulin responds to, but fibers are a type of carbohydrate so do they raise insulin levels as well? its a little confusing. Thanks.

Carbs vary from black to white when it comes to spiking insulin. Rice cakes are the absolute worst food for spiking insulin. They enter your blood stream faster than table sugar. Then you have carbs like green veggies that trickle into your blood stream. Fibre not only enters very slowly, but it also slows down the absorption rate of simpler carbs that are eaten in the same meal. Protein and fat also slows down the entry rate of carbs. That's why it's so important to balance all of your meals. Fruits are simple sugars but because they have fibre in them, they don't enter anywhere near as fast as sugar. White flour is almost as bad as sugar, because it is stripped of it's fibre. Fat free processed foods are the worst , because they don't have fat, often very low in protein, almost always made with white flour and have a ton of added sugar to make up for taking the fat out and losing taste. If you want to know how different carbs affect insulin levels , look up the "Glycemic Index". It gives all foods a number from 1-100 with sugar being 100 as a bench mark. The only food over 100 is rice cakes at 110 and those tasteless fattening crappy things are a staple in many diets.
