how do i make pancakes for one?
I like pancakes...now and then. I don't want leftovers!! How can I make ONLY 2 or 3 pancakes?

I usually make a batch, cook all the batter, then freeze the leftovers by stacking them in a freezer container using waxed paper between each pancake. They are a great quick breakfast, as they just take a few seconds to reheat in the morning. OR.. here is a recipe for a small batch ( 3 pancakes)
1/2 cup all-purpose flour
1/4 teaspoon baking soda
1/4 teaspoon baking powder
1/4 teaspoon salt
1 egg
1/2 cup buttermilk
1-1/2 teaspoons vegetable oil
Butter and syrup of choice
In a bowl, combine flour, baking soda, baking powder and salt. In another bowl, beat egg; add buttermilk an oil. Stir into dry ingredients just until blended.
Pour batter by 1/3 cupfuls onto a lightly greased hot griddle; turn when bubbles form on top of pancakes. Cook until the second side is golden brown. Serve with butter and syrup. (3 pancakes).

What do you think? If she lives in any English speaking Country and has the name Pancake, she will have nothing but teasing and will hate you for naming her that. Trust me. Give the child a real name and leave Pancake for a term of endearment. Like come here little Pancake but on paper have her name as a real name like Rebecca, Jana etc,,,,

If yu do have leftover batter cook them and pop them in to a Ziploc bag and freeze, I d that, and I just zap them in the microwave when I need a quick breakfast, 1 cup of dry batter should make 2-4 medium size pancake with the liquid added, I make mine a bit thicker.

It`s hard to do, if you want to use an egg in the recipe. I`ve been making pancakes for one for years and haven`t found a satisfactory answer to that one. I usually end up throwing away the last bit of batter, or making one last pancake and giving it to my dogs.

Pancakes freeze really well. Try making a batch and freezing some in ziplock bags. That's what we do. Then just microwave or toast as many as you like without the mess.

the most simple recipe is
one egg,
one cup of flour,
one cup of milk.
and sugar if you want etc. :)
