need a quick easy recipe to take to a funeral gathering?

I need something quick & easy I can make in the morning to take to a funeral gathering tomorrow afternoon

    When you make this dish, I strongly urge you to double, or better, triple

    it; otherwise I can assure you there won’t be enough...

    Pinapple casserole

    a 20-ounce can of pineapple,drained (in its own juice) chunks or tidbits. Save 3 tablespoons of the juice, and mix it with 1/2 cup of sugar and 3 table-

    spoons of flour. Stir that mixture in with the pineapple and a cup of

    sharp grated cheese. (I’ve never tried making this with fat-free cheese

    and consider that blasphemous, but I have used some reduced-fat

    cheese when it was all I had, and it came out okay.) Dump all that into

    a greased casserole. Melt a stick of butter, and stir into it 1/2 cup of

    Ritz cracker crumbs; put all that on top of the pineapple mixture. Bake

    it at 350 degrees for 20 to 30 minutes, and prepare to be comforted

    For dessert, dump cake. Quick, easy, and a friend makes this for work. the co-workers demand this, she never gets to make anything else.

    Ingredients

    1 (21 ounce) can cherry pie filling

    1 (15 ounce) can crushed pineapple

    1 (18.25 ounce) package yellow cake mix

    8 ounces chopped walnuts

    1/2 cup butter

    Directions

    1.In a 9x13 inch pan mix cherries and pineapple. Sprinkle dry cake mix over pineapple, and cherry mixture stir until just combined. Then sprinkle walnuts over top. Drizzle top with melted butter or margarine.

    2.Bake in a 350 degree F (175 degree C) oven for 35 or 40 minutes or until golden brown

    There are basically two kind of mac salad, one with, and one without the sweetened condensed milk. these are both traditional church supper and funeral dishes. Never been to either that did not have one or both. Play with the ingredients if you want, there are several versions.

    Ingredients

    16 ounces uncooked elbow macaroni

    4 carrots, shredded

    1 large red onion, chopped

    1/2 green bell pepper, seeded and chopped

    1/2 red bell pepper, seeded and chopped

    1 cup chopped celery

    2 cups mayonnaise

    1 (14 ounce) can sweetened condensed milk

    1/2 cup white sugar

    1/2 cup white vinegar

    salt and pepper to taste

    Directions

    1.Bring a large pot of lightly salted water to a boil. Add macaroni, and cook until tender, about 8 minutes. Rinse under cold water, and drain.

    2.In a large bowl, stir together the carrots, red onion, green pepper, red pepper and celery. Mix in the mayonnaise, condensed milk, sugar, vinegar, salt and pepper. Add the macaroni, toss gently, cover and refrigerate for at least 8 hours. I usually make this a day ahead of time, and stir it occasionally to blend the flavors. The macaroni will absorb some of the liquid

    A tray of cut vegetables (you can buy celery and carrots pre-cut). I'd add cucumber spears, and green and yellow pepper strips. You have to cut them yourself but they are still pretty quick. You can buy pre-made Ranch dressing or get the packet and make it yourself. Quick, easy and generally very popular. Another easy thing people usually really like is a tray of pepperoni slices and cut cheese, with crackers. For something a little different, get a can of fat-free re-fried beans. Spread them on a plate, cover with loads of Colby-Jack cheese and heat until the beans are hot and the cheese is melted. Serve with Olive Oil And Rosemary flavored Triscuits, or Garlic flavored Triscuits. Have fun and best of luck.

    Stir fry a bag of frozen mixed veggies; let cool completely. Cook rotini pasta until done, then run under cold water in a colander to chill. Drain well. Stir in cooked veggies, salt, pepper and some Italian dressing. Add whatever else you wish, such as fresh Italian herbs, chopped onion, sliced mushrooms. Easy and delicious. :)

    That pineapple casserole is really great - I have made it before! make it complete with a nice baked ham, already sliced (get the spiral sliced stuff, it's really easy to carve)

    aslo, you could make baked ziti, wrap the dish in a towle to keep it warm

    it is just macaroni tubes, cooked then mixed with jar spagetti sauce and top with mozzarella cheese

    but I guess you have to have the ingredients.Jazz the ziti up with some Italian sausage cut into rounds and added before the cheese

    A Hors d' Oeuvre tray...

    Carrot sticks

    Celery sticks, stuffed with peanut butter, cream cheese or Cheez Whiz

    Olives

    Cheddar cheese cubes

    Pickles

    Deviled eggs

    Spread wafer meat with softened cream cheese; place a dill pickle spear at one end and roll up.

    Ambrosia Recipe

    1 small package of Pistachio Instant Pudding

    1 small container Cool Whip (defrosted)

    1 small can crushed pineapple (drained)

    Mix everything together - serve. (You can add a half bag of small marshmallows if that sounds good).

    You can double this recipe if you want a larger amount of Ambrosia.)
