Look up Gustav Mahler's Symphony No. 1. Mahler almost always used a massive orchestra, so his pieces will have a great variety of instruments. If you could have vocals, I would suggest his Symphony for a Thousand. You could also try Pines of Rome by Respighi or Symphonic Metamorphosis by Hindemuth. These are just orchestral pieces, but they use alternate instruments such as the e flat clarinet, the contra-basoon and such.
