Fun, Tasty Summery Memorial Day Dessert Recipe?

Looking for a tasty, summery, and fun Memorial Day Dessert Recipe. Any suggestions? I want it to be a hit at the weekend party that I will be attending.....

    Normally I'd say ice down a watermelon in a big ice chest, adn pack a knife as well. But if you really want a recipe...... make this with both blueberry and cherry pie fillings, to make it red, white, and blue.

    Blueberrry Delight

    Crust:

    2 cups flour

    2 sticks butter,melted

    1/2 cup chopped pecans

    Mix together and press into a 9 x 13 cake pan. Bake at 350 for about 15 minutes until slightly brown. Let cool completely.

    Filling:

    1 8 oz. cream cheese,softened

    1 8 oz. cool whip

    1 box powdered sugar

    Mix together and spread on top of crust. Top with 1 can of blueberry pie filling. (Can use any type of pie filling you like.)

    If you feel like putting a little work in, here's my favorite lava cake recipe. Chocolate cake that is firm and moist on the outside, but still gooey chocolate on the inside. Just serve it with a big scoop of vanilla ice cream and the people there will be begging you for your secret.

    6 oz. Semi-Sweet Baking Chocolate (or 70% dark chocolate bar, your choice)

    6 oz. Butter (diced, room temperature)

    3 Eggs

    1/2 cup Granulated Sugar

    1/3 cup Flour

    1 TSP Vanilla Extract *optional

    Butter for Ramekins

    4 Ramekins (this makes 4 6-8 oz Ramekins (medium cakes)

    Preheat oven to 350°F

    1. Melt chocolate on low flame in a double boiler. Take off of flame.

    2. Stir in diced butter until it melts and combines completely

    3. In another bowl, beat eggs and sugar, until it starts to whiten.

    4. Stir in the melted chocolate, then flour.

    5. Butter 4 ramekins and pour in your chocolate batter.

    6. Cook for about 10 minutes, or until the outside appears firm enough to handle.

    7. Tip ramekins upside down, gently scraping a thin knife around the inside of the Ramekin if necessary, and gently place the cake onto dessert plates and serve.

    You may garnish with fresh fruit (strawberries work well) and of course, vanilla ice cream.

    STRAWBERRY SHORT CAKE

    1/2 c. butter

    1 c. sugar

    2 eggs

    1/2 c. milk

    1 3/4 c. flour

    1/4 tsp. salt

    2 1/2 tsp. baking powder

    3/4 tsp. vanilla

    Mix all by hand: Cream butter, sugar then add eggs and vanilla. Add mixed dry ingredients alternately with milk. Blend well. Butter an 8x8 inch pan. Bake at 350 degrees about 40 minutes.

    Here is something a little tasty that I made up....and tried and actually everybody loved it!

    you'll need a package of white or yellow cake mix

    1 large package of vanilla pudding

    1 container of cool whip

    2 packages of strawberries, blueberries, raspberries....any type of berries you want...

    prepare cake and pudding as directed...

    In a truffle dish...

    put a layer of the white cake at the bottom

    a layer of vanilla pudding

    strawberries, blue berries, raspberries

    a layer of cool whip....

    keep layering until bowl is full and whipped cream is on top....and a few pieces of remaining fruit for decoration...

    Refrigerate a couple hours before serving, or over night.

    I just saw some cute little pre made tart shells at my local groceries, OR you can use those premade graham cracker crust mini pie shells and fill with and assortment of canned pie fillings, like cherry, blueberries and vanilla custard or the new ready to go cheescake filling topped with fresh strawberries, blueberries and whip cream, and viola, you have your 'red,white and blue' desserts!
