1 large or 2 medium onion

    1 1/2 cup uncooked rice

    1 cup slivered almonds

    1 cup golden raisins

    1 teaspoon ground cardamom

    1 teaspoon cinnamon

    1/2 to 3/4 teaspoon pepper

    Salt to taste

5 tablespoon butter for frying, divided usage

    2 chicken bouillon cubes

Grate onion over paper plate or into bowl so as not to lose the juice. (Can also chop fine in processor using 1 cup water.) Measure onion & juice plus enough water to measure 3 cups & 3 tablespoons. Place this in sauce pot used to cook the rice & begin to heat.

Meanwhile, fry rice in 2 tablespoons butter in large skillet, stirring constantly until golden brown. Add to onion liquid along with bouillon cubes & bring to boil, reduce heat, cover & cook 20 minutes.

In fry pan used for rice, fry almonds in 2 tablespoons butter, stirring constantly over low heat until golden brown; remove. Fry raisins in 1 tablespoon butter over low heat, stirring constantly until plumped; remove.

Brown ground beef, drain & crumbs. Add spices to beef & continue to brown for a couple of minutes. Add cooked rice, fried raisins & almonds to meat & blend well. Taste & correct seasoning.

Nothing fancy, but would have to be Meatloaf. Hamburger Spanish Onion (Latin onions make it so much more festive) Crackers (smashed in my hands with hatred, to mere dust) One large egg (chicken, not like a lizard, or spider egg, to be clear) Pepper, Parsley, Sage, Oregano a few shots of Ketchup and/or BBQ Sauce Now create your "loaf looking" meat and use 2 fingers to make a trench. Let back for about 20 minutes at 375 F. In the meantime, mix some ketchup, bbq sauce, mustard, and honey to taste. Mix together well. Now pour all over the "loaf" as well as filling in the trench with this sauce. Some fresh Parsley on top gives it that "2 Star Restaurant" look. Bake another 10-15 minutes. Times will vary if you are using gas or electric oven. Also, size of "loaf" figures in too. Try not to get any E Coil and over cook rather than under. As strange as all of that sounds, now put grated cheese sprinkled all over said "loaf" and only put in long enough for this cheese to start to melt, just not all the way melt. If you are a spinach fan, you could have put hand ripped pieces into the mix before turning it into a loaf. This is one of the first foods I must eat after I feel like some Comfort food. Today, for instance, would be a great day for this, for me. Enjoy! Peace:)

I love stuffed peppers made with an egg and some Italian bread crumbs, minced onion, salt, and pepper. They are expensive in the store if they are frozen, but homemade ones are cheaper and better. Put some tomato sauce over them when almost done cooking. Peppers are expensive, and I cut mine in half and fill them up. That is enough for one person (half a pepper with the meat in it).

    Pasta Bolognese

2 (28-ounce) cans whole tomatoes with juice or crushed tomatoes

    3 tablespoons olive oil

6 ounces pancetta or 6 slices bacon, finely chopped

1/4 pound ground pork (not lean)

1/4 pound ground beef chuck (not lean)

    1/4 pound ground veal

1 small onion, finely chopped (about 1 cup)

1 carrot, finely chopped (about 1 cup)

    1 cup dry red wine

    1 cup heavy cream

    1 teaspoon kosher salt

1 teaspoon freshly ground black pepper

1 pound small pasta such as orecchiette or rotini

    Garnish: Freshly grated Parmigiano-Reggiano cheese

    preparation

If using whole tomatoes, in blender or food processor, purée tomatoes with juice. Set aside.

In large, heavy pot over moderate heat, heat oil until hot but not smoking. Add pancetta and sauté until golden brown, 5 to 6 minutes. Add beef, pork, and veal and sauté, breaking up meat with back of spoon, until browned, 7 to 8 minutes. Add onion and carrot and sauté until vegetables are tender, 5 to 6 minutes.

Stir in red wine and simmer, scraping up browned bits stuck to bottom of pan, until liquid is reduced by half, about 5 minutes. Stir in tomatoes, cream, salt, and pepper. Reduce heat to moderately low and simmer, uncovered, stirring occasionally, until sauce is thickened and brick-red in color, approximately 30 minutes.

In large pot of boiling salted water, cook pasta until almost tender. Drain well and toss with sauce. Serve with grated cheese.

also taco meat makes great sloppy joes.

    stuffed meat balls

mix meat with garlic and peppers, roll into balls then squish flat , place a small dollop of a soft cheese ( this is jus easier you can put shredded cheese in to ) fold up sides . now fry in a pan.
