I guess you're talking about the bubblegum taste/aroma you get with kits. If that's the case, then the higher up the price scale you go, the less noticeable it is. The 7.5l concentrate kits I've made (Beaverdale, CalCon in the uk) up to 28 bottles, exhibit it, as do the 10l kits (Kenridge Classic), but not so much. Apparently if you leave the wine it the taste will lessen, but I'm guessing that might take over a year. If you go to the 16l kits (costing £75 and up) it's only slightly noticeable even when new (but you should really age these wines for a couple of years for them to develop their complexity anyway). The taste is down to something known as a Maillard reaction when the wine is turned into concentrate. Some molecules change structure (or they caramelise) and are unfermentable, and go on to affect the taste. (This only happens with reds. I don't notice the taste with whites, and the £45 kits are actually pretty good.) I'm guessing the only way to eliminate it entirely is to use real grapes, or the pure juice kits which are very expensive. Another thing is that some people think that adding the potassium sorbate to stop the yeast from multiplying, imparts a flavour, but I don't notice a difference
