What is a good substitution for flank steak?
I have a recipe that calls for flank steak but I cannot find it. What can I put in its place? Whats so special about it? Where can I find it? Thank you!

I don't know where you're located, but flank steak is called "London Broil" on the East coast. Also, you could sub. skirt steak, or hangar steak, or sirloin if you slice it thinly against the grain before serving.

Flank steak is a very fibrous, lean cut and that's what makes it unique. It's part of a muscle on the cow that gets quite a lot of exercise. It's fantastic for long marination and then searing. I often use it for tacos or fajitas. If you can find skirt steak, it's more-or-less the same thing.

Try a flat iron steak or skirt steak. Not entirely sure, but I believe the flank, flat, and skirt steaks all come from the same area of the cow.
