Is it legal/ possible to purchase beef in the U.S. that hasn't been cured/ aged?
Freshly dressed and cooked venison tastes much nicer than aged venison, so I wondered if the same were true of beef? I know the aging is supposed to improve flavor and tenderness, but I disagree. Will a butcher sell fresh- slaughtered meat? Will the health regs allow it? Thanks.

Yeah its legal. My father knows a cattle herder and purchases half a steer from him and has it delivered to the butcher for carving. In my opinion its cheaper to do it this way.

Most beef sold in the USA has not been cured or aged. Cured or aged beef is very expensive. Most beef is USDA choice and is slaughtered in a slaughter house, butchered and packaged then shipped to supermarkets. Certain butchers may buy a whole or half cow and butcher it themselves. It certainly is not as fresh as a freshly killed cow or deer, but is should not be more than a few days old.

Dreaming Of, has it Right. Call a Local Butcher Shop. We have Plenty of Cattle in Texas and it is no big deal to buy Beef On the Hoof and take it to the Butcher or do it yourself.

It's legal, possible, and the norm.
I live in Texas, and the only beef I've ever eaten that WASN'T fresh was BBQ (smoked) or beef jerky (smoked & cured). I get fresh, raw beef from the grocery store a couple of times a week.
Can't afford that aged meat!
