basic cornmeal muffin recipes?

Looking for a basic cornmeal muffin recipe that does not need any oil- I ran out and with my broken ankle can't walk to the store!

I have :

cornmeal

baking powder

about 1tbsp baking soda

margarine

pineapple

bananas

walnuts

eggs

milk

white sugar

Any muffin recipes that use only these items would be fantastic. Thank you.

    2 c. self-rising cornmeal (white)

    Hot bacon grease

    Buttermilk

    12 cup muffin tin

    Thats all you need!

    Measure cornmeal into bowl. Add 1 teaspoon bacon grease to each muffin cup and place in 425 degree oven to heat. Add buttermilk to meal to make medium batter (not too stiff). Pour hot grease carefully into batter and mix well. Pour batter into hot muffin tins and bake 20 to 25 minutes at 425 to 450 degrees until brown on bottoms. Place upside down on plate for crisp bottoms.

    1 cup whole-grain yellow cornmeal, fine-ground

    1 cup unbleached all-purpose flour

    1/4 cup sugar

    1/2 teaspoon salt

    4 teaspoons baking powder

    2 large eggs, at room temperature

    1 cup milk, at room temperature

    2 tablespoons unsalted butter, melted

    Adjust oven rack to middle position and heat oven to 400 degrees F. Lightly butter or spray the 12 molds in a regular-size muffin pan or fit the molds with paper muffin cups. Alternatively, use a silicone muffin pan, which needs neither greasing nor paper cups. Place the silicone muffin pan on a baking sheet.

    In a large bowl, whisk together the cornmeal, flour, sugar, salt. and baking powder. In a large glass measuring cup or another bowl, whisk the eggs, milk, and melted butter together until well blended. Pour the liquid ingredients over the dry ingredients and, with the whisk or a rubber spatula, gently but quickly stir to blend until batter is just combined and evenly moistened. Do not over-mix. Divide the batter evenly among the prepared muffin cups.

    Bake muffins until light golden brown and toothpick or skewer inserted into center of muffins comes out clean, about 20 to 25 minutes, rotating muffin pan from front to back halfway through baking time. Transfer the pan to a wire rack to cool slightly, about 5 minutes. Invert muffins onto wire rack, stand muffins upright, cool 5 minutes longer, and serve warm.

    Basic Corn Muffins

    Cream together :

    1/4 c. butter

    3/4 c. sugar

    Beat in 2 eggs

    Then stir in the following :

    1 c. milk

    1 c. cornmeal

    2 c. flour

    4 tsp. baking powder

    Spray muffin pans or grease and flour them . Fill muffin cups 3/4 full . Bake about 20 min . at 350 degrees F.
