Every time I make bread the top ends up really hard. How do I avoid this?

This happens with both yeast and quick breads.

    I've always brushed butter or margarine on the top of breads as soon as I pull them out of the oven. It's always kept the tops nice and soft.

    As soon as you take your bread out of the oven, take some butter and rub it over the top crust. This will soften it up so it is not hard.

    you slice down the middle for italian bread and you slice diagonally for french bread and they are both hard crust breads so i don't know what the person before me is thinking. To get your bread crust to stay soft brush it with a thick coat of melted butter before you put it in the oven. If it is a "burnt" hard crust lower the temp of your oven but if it's just a hard crust brush it with melted butter.

    Make a small slice down the middle of the top vertically , about 4-5 inches and baste the top with melted or clarified butter before baking.

    Try adding butter.
