What happens to onions in a food processor?

When I dice onions and put them in a food processor to get a smooth paste to use in cooking, the onions turn bitter.

Can anybody explain why this happens and how to avoid it?

    Onions contain a lot of a sulfur containing compound in them (that's what makes some people "cry" when cutting onions) and it's quite possible that processing them that fine is releasing that chemical and causing the bitterness.

    Try dicing the onions, slowly cooking them with a bit of salt and pepper and then running them through the food processor. The sulfur containing compound is destroyed by the heat of cooking and in theory, shouldn't be a problem once the onions are cooked.
